Salad days



The sun is shining once more. We’re clearly heading for another warm day. We’re going to have a salad for dinner today – a Salade Niçoise. My mind goes off back to the authentic Salade Niçoise we had in a restaurant on the Cours Salaya in Nice. It’s a few years ago now but the image remains fresh in my mind.

We will be using real tuna - out of a tin in other words. The recipe suggests grilling fresh tuna but I’m using the cheat’s method, at least partly because we tend to prefer the tinned fish. It also makes it easier after a tiring day & cooler on what promises to be a hot day.

I will add some black olives but not many as neither of us are very keen on olives. The green beans & peas will be coming out of the freezer, another cheat.

It may not be going to be the authentic thing but it should make a welcome change on a hot day.
